When there's not much in the fridge, you still need to eat

A friend of ours gave us a place to stay last weekend when we were out of town on business. He's a bachelor and he has a job which takes him out of town for, sometimes, weeks at a time.
Needless to say, he doesn't keep much fresh food around the house. He might get some fresh fruits and veggies when he drags himself back home after an extended time on the road, but while he's gone, the pickin's are pretty slim.
Looking for breakfast the first morning there, I realized I'd have to go to the grocery (no worries, we had a free place to stay). In the meantime, I was hungry.
The fridge was loaded top to bottom with a variety of beers and ales, some spices, but not much more...
A jar of apple sauce looked OK. The eggs and milk were expired. The flour and sugar had never been opened. Some natural crunchy clustered cereal seemed to be in good order as well. I think we were cool for breakfast.
Bachelor Pad Applesauce Cake
1 cup of applesauce
1 cup of flour
1/2 cup of sugar
1/4 cup of oil
1/4 cup of water
1 teaspoon of cinnamon
1/2 cup of natural cluster ceral (like Kashi Go-Lean Clusters)
  • Mix all the ingredients in a bowl to make a thick batter.
  • Pour it into a greased and floured pan.
  • Crush the cereal. Sprinkle the crumbs on top.
  • Bake at 350 degrees for 30 minutes.

Vegan.
