Warm up with a tasty soup...

I have a friend who has way too many zucchini and not enough recipes featuring zucchini.
And here we are in the middle of a cold snap. A mere 55 degrees in the middle of the day here in Central Florida and we're not even in winter. That may sound warm to the rest of the country, but people here are looking for ways to warm up.
You could wrap up in that zebra print Snuggie and sit by the oven to warm up, but that seems a bit impractical. You could just burrow under the covers and not come out for a few days.
Or you could make some soup.
That seems the tastiest option. Besides it's warm in the kitchen and once you get chopping and stirring, you're bound to warm up.
This soup, with a touch of eastern curry, is bound to wake up your taste buds and warm you. When I first tried this recipe a couple of years ago, I thought that the combination of flavors would be awful, but they blend so seamlessly that you just don't taste the individual flavors. All you taste is goodness.
So, you can get rid of that excess zucchini, have a great tasting soup and warm up all at once.

Curried Zucchini and Apple Soup
2 medium onions, chopped
1 pound of diced zucchini, not peeled
2 medium apples (I think Granny Smiths work best because they aren't too sweet), chopped 
4 cups of vegetable broth
2 tablespoon of curry powder
1 cup skim milk
2 cloves of minced garlic
1 teaspoon of salt
1 tablespoon of sugar

  • Spray a large non-stick pot with cooking spray. Over medium heat, add the garlic, the onion and the apple. Cook them until they start to soften, about eight minutes.
  • Sprinkle in the curry powder and salt and continue to cook, stirring all the while, for one minute.
  • Add the zucchini and the veggie stock. Bring it all to a boil, then reduce the heat, cover the pot, and simmer the whole thing until all vegetables are soft.
  • Remove the pot from the heat.
  • Use an immersion blender or a mixer - if that's what you have - to puree the veggies into a smooth soup until smooth. 
  • Heat the soup up again over low heat and stir in the milk.

Vegetarian (you could probably use soy milk to make it vegan.)
