A sweet way to warm your soul and slim your body


It's pretty darned cold in Florida right now. For a people used to wearing shorts and flip-flops year round, the lows that are expected to be in the mid-20s tonight are foreign numbers.
We go to the beach to have a white Christmas. We wear ski caps because our hair is dried out from too much time in the sun, not because we're trying to keep our head warm.
This is why we live so far south. We like to be hot.
Since the weather isn't cooperating, I decided to make some warm Cabbage and Apple to go with some Potato Soup, toasted Rye Bread and some Smoky Grilled Tofu...a not so traditional German-inspired meal.
The cabbage is sweet and peppery. It has plenty of fiber as well as Vitamin C, Vitamin K, Folate, Potassium, Manganese, Vitamin A, Thiamin, Vitamin B6, Calcium, Iron and Magnesium. It's low in cholesterol and actually promotes weight loss, according to some studies.
This dish costs just pennies to make, but it is so good, you'd never guess it.
Warm your body and your spirits with this one while helping to work on your bikini body under all those coats and sweaters.
Warm Cabbage and Apple Slaw
2 tablespoons of vegetable oil
8 cups of shredded red cabbage
1 onion, chopped
2 apples - peeled, cored and sliced
2 tablespoons of water
salt and pepper, to taste
3 tablespoons of sugar
3 tablespoons of apple cider vinegar
  • Heat the oil in a saucepan and stir in the cabbage and the onion, fry until the cabbage is wilted.
  • Stir in the apple and the water and season with salt and pepper to taste. I tend to go a little heavier on the pepper, because this is sweet enough with the apples and the sugar.
  • Cover the pan and simmer for 25 minutes.
  • Pour the vinegar and the sugar over the cabbage and onion and cook for another 5 minutes or so.
