This sauce is the key to a great gyro

Steve and I are trying to eat a little healthier and to lose a little weight. Sure, sure...isn't that what everyone says at this time of year.
Steve came up with some things he'd like to eat. I tried to come up with some lower calorie, easy-to-make versions of his favorites. And, if they were meat-based, I had to come up with a veggie version as well.
So, for this evening, we decided to go Greek: gyros.
When I ate meat, I loved gyros. As a vegetarian, I still love them. Maybe that means that it's really the pita and the cucumber-dill Tzatziki sauce that I love.
This sauce is really the star of the show with gyros. Once you get this recipe down, you can make gyros of either the vegetarian or the carnivore variety and you'll be the star chef. 
Easy Tzatziki
2 cups of Greek yogurt
1  cucumber, unpeeled and seeded
2 tablespoons of lemon juice (fresh squeezed is best)
1 tablespoon of white wine vinegar
1 tablespoon of minced fresh dill
4 cloves of garlic, minced
2 teaspoons of kosher salt
1/2 teaspoon of pepper
  • Place the yogurt in a medium bowl. Grate the cucumber and squeeze the grated cucumber with your hand to remove some of the liquid.
  • Stir the cukes into the yogurt, the lemon juice, the vinegar, the dill, the garlic, the salt and pepper and stir. 
  • Refrigerate for about an hour before using.
  • Stuff each half of a pita with the Tzatziki, some spinach and some tomatoes.
