Fluffy biscuits: so easy to make

- Biscuits are like people.
- There are so many varieties that you'll never really tire of meeting new kinds.
- There are soft biscuits, biscuits that are dense, biscuits that are made with corn meal and biscuits that are made with oatmeal.
- My favorite kind seems to change from time to time. Right now, my favorite kind is the fluffy biscuit.
- Airy and tall, these are the perfect biscuits for slathering with butter and honey or sopping up the sauce on your dinner plate.
- These are so simple to make that you won't have any second thoughts about making these for a weekend breakfast or for dinner.
- Fluffy Biscuits
- 2 cups of flour
- 4 teaspoons of baking powder
- 3 teaspoons of sugar
- 1/2 teaspoon of salt
- 1/2 cup of shortening
- 1 egg
- 2/3 cups of milk
- In a small bowl, combine the flour, the baking powder, the sugar and the salt. Cut in the shortening until the mixture resembles coarse crumbs.
- Beat the egg with the milk and stir that mix into the dry ingredients just until the whole mix is moistened.
- Turn the dough onto a well-floured surface and it knead 20 times.
- Roll it out to about 3/4 of an inch thick and cut with a floured two-and-a-half inch biscuit cutter.
- Put the biscuits on a lightly greased baking sheet and bake at 450 degrees for 8 to 10 minutes or until golden brown.
