Trying to Stick to a diet is a bit easier with these snacks



    I am, still, on a quest to lose weight. Steve and I have decided that for every pound we lose, we can bring a pound of non-essential stuff with us when we eventually move aboard a boat to sail off into the sunset.
    So far, I'll be able to bring my laptop, my phone, 2 bottles of wine (could that be considered an essential item), a box of paints and brushes, and a sketch book. Fortunately, my kitchen items are all considered essential.
    But, in order to earn more goodies, I am working on some other low-fat recipes. Still, I like to snack. So I put together this version of mozzarella sticks to ease a recent snack attack.
    I figured it up and these are still about 150 calories each, a little better than the 200 calories in a "regular" cheese stick. And, if I can just eat one (I'll tempt Steve with the others), I'm sure to keep dropping the pounds.
    Low Fat Mozzarella Sticks
    1 package of light string cheese  1/2 cup of Panko bread crumbs 1/4 cup of egg substitute 1 Tablespoon of Italian seasoning, to taste  Salt and pepper, to taste
  • Preheat oven to 375Āŗ F. Place crumbs in a small container with a lid. Season them with as much salt, pepper, and Italian seasonings as you like. Set aside. 
  • Cut the cheese sticks in half. Put them in a small bowl, and pour the egg substitute over the top of the sticks. 
  • Swirl the bowl around so that it thoroughly coats the sticks. One by one, transfer sticks to the container with the crumbs. Put the cover back on and give it a shake to coat the sticks in the crumbs.
  • Carefully return the sticks to the dish with the egg and coat them again.
  • Put the sticks on a greased baking dish (olive oil is best)
  • Spray a bit of olive oil on top of the sticks. 
  • Bake for 10 minutes, but keep an eye on them and take them out as soon as there is the first sign of cheese oozing out.
