Wake up your taste buds with this rice dish

I think a rice dish can make or break the rest of a meal. 
You don't want it to over power everything else, but if it's not doctored up just a bit, you risk it being just a mushy thing that draws everything else down. I think a citrusy rice will enliven your taste buds just enough that everything else tastes better.
I was looking for something other than the typical orange rice to go with a black beans and salsa dish and thought I'd try some lime and cilantro as those tend to be the sort of flavor pairings that are often found in Southwest or Mexican cooking.
This rice was perfect with the beans, but if you're cooking for carnivores, I've been told it goes well with chicken. I think it's one of those rice dishes that stands on its own as well.
Lime Rice
1 teaspoon of butter or an equal amount of vegetable oil
 teaspoons of fresh cilantro

  • 2/3 cup of rice



  • 1 1/2 cups of water



  • 1/2 teaspoon of salt



  • 1/4 teaspoon of white pepper



  • aJuice of 1 lime

    • In a 2-quart heavy saucepan, heat the butter over low heat, stirring occasionally until melted. If you're using oil, make sure it's heated through, but not smoking hot.
    • Add the rice and the lime juice, stir for 1 minute.
    • Add the water, the salt, bring to a full rolling boil.
    • After it comes to a boil, cover the pan, turn the heat down and simmer the mixture over low heat until the rice is tender and the water has been absorbed (about 25 minutes).
    • Add in the cilantro and fluff rice with a fork.
    Vegan (unless you use the butter)
