Cool way to cool off

    It has been WAY TOO HOT to cook the last few weeks. Even for me, a native Floridian, these 100º days have been brutal without air conditioning. We've been busy too. 
    Anyhow, getting back in the kitchen, I wanted to make something that didn't heat things up too much. I baked up some pita chips, which go quickly and don't have time to make the kitchen intolerable.
    Meanwhile, I sliced up some cool fruit and chopped up a bit of cilantro. And, voilá, you have a yummy salsa that is great either warm or cold...I prefer cold, but I have kept it warm and poured it over fish for carnivore friends. They tell me it's delicious that way. But cool or cold, it is great with beans or chips. 
    You can also make a great wrap with this salsa by mixing it with beans and crema. 
    Citrus Salsa
    1 pink grapefuit 1 orange 2 limes A pinch salt 1 teaspoon of cilantro, chopped
    •Segment the fruit over a bowl by taking off the rind and pith with a knife.
•Once all the white pith is removed make V shape strokes with a small knife in between each membrane to remove the fruit.
Squeeze out any leftover juice.
Put the fruit in a small sauce pan and warm.

•Mix in the chopped cilantro and stir the whole thing up.

Vegan.
