Back for more fun and beans

It's been a while since I posted here.
Life has been moving along at an insanely hectic pace. For a while there was not even time to cook. Then - after about a decade and a half - Steve proposed.
And, then, we got married.
Now, still in the glow of newlywed married life, we are trying to settle into our "new" life together.
Genevieve and I made a beautiful wedding cake that was festooned with beautiful and tasty chocolate shells. 
Much weight was gained so it is back to eating well these days.
Steve and I decided that when we sail away some time in 2013, we'll have to eat less meat (no worries for me, but a complete lifestyle change for a man who eats flesh at every meal). I'm trying to get him used to it with a few tasty meat-like meals a week.
We started off with a delicious bean burrito. He loved it, so it's going in the cruising cookbook.
Burritos for the Flexitarian
2 whole wheat tortillas
1 can of black beans, drained and rinsed
1 teaspoon of cumin
3 cloves of garlic
1/4 red pepper, chopped
1 mango, chopped
1/4 red onion, chopped
Salt and black pepper, to taste
Hot sauce, to taste

  • Throw everything but the tortilla in the fry pan with just a splash of olive oil.
  • Warm the tortillas.
  • Fill with the bean mixture. Roll it up.
  • Bake for 5 minutes at 350Āŗ.

Vegan.
