All wrapped up for Christmas: goat cheese and honey


Anything made with phyllo dough is automatically fancier. And more delicious.
Add honey and goat cheese and you have something really special.
I have ended many a meal with goat cheese drizzled with honey. The sweet honey is a wonderful contrast with the tangy cheese. This is no diet food, but for those of us on diets, it is a great once-in-a-great-while treat.
If you're going to splurge, you might as well eat something that looks as beautiful as it tastes and add a few extra yummy calories in the process. Take that goat cheese and honey and wrap it up for the holidays in a golden phyllo crust. I made pretty little triangles, but you could make little holiday presents with phyllo wrapping paper and bows if you wanted to to take the time.
Try these for the holidays or make up a batch and freeze them. Thaw them out one at a time for a special treat.
Goat Cheese and Honey Phyllo Treats
2 5-ounce logs of goat cheese, softened
  • 1/2 cup of honey, divided
  • 2 large egg whites
  • 1/8 teaspoons of salt
  • 1/2 cup of olive oil
  • 12 sheets of frozen phyllo dough, defrosted in refrigerator

  • Beat the goat cheese, 1/4 cup of the honey, the egg whites, and the salt with an electric mixer until smooth. Chill for at least 30 minutes.
  • Preheat the oven to 375°. Coat a baking sheet with cooking spray. Warm the olive oil and the remaining 1/4 cup of honey in a saucepan over medium heat until the honey dissolves.
  • Put one sheet phyllo dough out, and brush  half of it with the oil mixture. Fold the phyllo in half lengthwise, and brush the top with the oil mixture. Fold it in half again to make a 4-inch strip of dough.
  • Brush the strip with the oil mixture, then spoon 2 tablespoons of the  goat cheese mixture on corner of the bottom edge. Fold the corner across to make a small triangle, then fold it all up like a flag with the cheese inside.
  • Brush both sides of the phyllo triangle with the oil mixture, and put it on the baking sheet.
  • Do it all again with the rest of the phyllo sheets.
  • Bake them for 20 minutes, or until the triangles are golden. Cool them on a wire rack for about 10 minutes before serving.
