Be the hit of the party with this quick, healthy dip


  • It's that time of year. You get home from work and you barely have time to throw yourself together for the third pot luck party to which you have been invited this week, much less throw something together to bring to share at the table.
  • This recipe is not only easy, it's pretty healthy for a holiday snack.
  • Mushrooms are a rich source of riboflavin, niacin, and selenium. Selenium is an antioxidant that works with vitamin E to protect cells from the damaging effects of free radicals. One study has shown that men who consumed twice the recommended daily intake of selenium cut their risk of prostate cancer by 65 percent. Women, in a different study, were shown to cut their risk of breast cancer in half by eating as little as one mushroom a day.
  • You can throw this special treat together when you get home and let it bake while you shower and dress for your party. Bring along a loaf of crusty bread and you'll be the hit of the party.
  • Quick Mushroom Dip
  • 3 tablespoons butter
  • 1 pound fresh mushrooms, sliced
  • 1 small onion, chopped
  • 1 1/2 tablespoons all-purpose flour
  • 1 cup sour cream
  • 1/2 teaspoon lemon juice
  • 1 pinch salt and pepper to taste
  • 1/3 cup Parmesan cheese
  • •Preheat oven to 375Āŗ.
  • •Melt the butter in a skillet over medium heat. Stir in the mushrooms and the onion, and cook until tender. Sprinkle with the flour. Reduce heat to low, and continue cooking 5 minutes. Mix in sour cream and lemon juice, and season with salt and pepper. Transfer to a small casserole dish, and top with Parmesan cheese.
  • •Bake 15 minutes in the preheated oven, until bubbly.
