Break free with an exciting breakfast

Breakfast can be boring.
Cereal, yogurt, eggs...yada yada yada...
You just don't have too many choices it seems.
Lately, I have been trying to shake things up a little. I just wanted to eat things that aren't necessarily "breakfast food".
Of course, I could have some cold pizza, but that doesn't do much for my weight loss attempt. Besides, I'm trying to eat healthier these days.
If you're ready to break free with your breakfast, try something that is healthy but so tasty, you'll get your day off to a good start.
Use a good quality whole grain bread as your base for this. It might work with a lesser bread, but you'll start your day off better if you have some whole grains to get things going.
Better than cold pizza for sure, this meal is full of veggies and grains to get your day off to a great start...much better than the stuff that old tiger used to push.
Better than Pizza for Breakfast 
1 slice of whole grain bread
1/2 of a tomato, sliced thin
A hand full of spinach leaves, hard stems removed
1/4 of a red onion, sliced thin
1/4 cup of mozzarella cheese
Pepper, to taste
  • Pile the tomatoes, the spinach, the onion and the cheese on the bread.
  • Season with a bit of pepper.
  • Broil on low for about 3 minutes.
