Spread the word - almond butter is so easy to make


  •   I had always wanted to make my own peanut butter, but never got around to it. Recently, however, I discovered almond butter. So, my focus shifted to a different sort of nut.
  •   I know that almonds are not exactly a budget nut - certainly they are more expensive than peanuts, but they are less costly than macadamias, for example. It is more cost effective to make your own nut butters than to buy the premade sort.
  •   Besides, you know exactly what's in it.
  • In the case of this particular butter, there are just two ingredients. No added salt. No added sugar. No preservatives. Just almonds and a tiny bit of olive oil. That's it!
  •   While peanut butter and almond butter are comparable on calories, almond butter has a little less saturated fat, a bit more fiber and a lot more calcium and twice the iron as peanut butter. So, you're getting much more  nutritional value with the almond butter.
  •   If you want the comfort food value of peanut butter, use peanuts instead, I suppose any kind of nut will do in this recipe. I plan, sometime soon, to try hazelnuts and add some sugar, cocoa and vanilla to try to duplicate Nutella®.
  •   But that's another day...
  •  This is so easy that I have no idea why I didn't try it earlier. Don't procrastinate like I did.

Almond Butter

  • 1 cup toasted almonds (use the almonds right after your roast them so they are still warm)
  • 2 teaspoons olive oil

  • •Put the almonds in your blender (if you have a food processor, use that - I would imagine it is easier, but I only have a blender).
  • •Blend them on high for about 5 to 7 minutes.
  • •Drizzle the olive oil over the nuts and blend them for another 3 or 4 minutes, stopping to scrape down the sides.
  • •The heat from the spinning blades will help make this more buttery so don't worry if it gets a little warm.
