Tired of plain ol' salsa? Give this fruity version a try


Sometimes when one writes a blog, it seems like it is a diary that no one else reads. It becomes a place where you write your thoughts and record some recipes, but it goes no further than that. I had, in recent months, put aside this blog because, I thought, no one would notice.
I have in recent days had several emails and Facebook notes asking about the status of this blog, so I suppose y'all were out there waiting. Sorry to have let you down.

Last evening, I was looking around the kitchen for something good and good for me. Still working on peeling off some unwanted pounds, but wanting something sweet, I have a lot of fruit on the counter. In the garden, I have a nice selection of delicious fresh herbs.
Mix all that up and you've got a sweet and savory salsa that is great by itself or with some sweet homemade tortilla chips.
This is a snack that can be put together in no time flat. It's not your mother's salsa...not spicy, or salty. Just fresh, fresh, fresh. And so good that you'll forget there is hard;y any fat or cholesterol  (or even calories). Your taste buds and your scale will thank you for this one!

Watermelon Peach Salsa

1 cup of chopped peeled peaches
1 cup of chopped seeded watermelon
3 tablespoons of orange juice
1 tablespoon of chopped fresh mint
1 tablespoon of finely chopped red onion
1/2 teaspoon of thyme leaves

  •  Mix all the ingredients in a medium bowl until well blended.
  • Cover and refrigerate for 30 minutes to blend flavors.
For easy sweet tortilla chips, preheat oven to 375Āŗ. Mix 2 tablespoons of sugar and 1 teaspoon of cinnamon in small bowl. Spray tortillas with oil, cut them into wedges and sprinkle them with the cinnamon sugar. Then just bake them for about 10 minutes.
