Mini, lo-cal pizza: good and good for you

Looking for a quick lunch the other day - after I made several "loaves" of delicious flat bread - I pulled one of the smaller ones out of the bag and tried to settle on some sort of meal.
I could take some sort of cheeses and make a grilled cheese sandwich. Or fill it with veggies or something like an eggless egg salad.
"Honey," Steve called from downstairs, "is there any left over pizza?"  The night before I had made him some sort of meat-lovers pizza the previous evening.
That's it. Pizza.
I shredded about an ounce of mozzarella on the flat bread, added spinach, a couple of mushrooms and a tiny bit of ricotta and I had a tasty meal in a few minutes. (And, yes, I remembered to get a slice of the greasy other stuff for my sweetie.)
Less than 10 minutes from start to finish and under 180 calories by reckoning. Not bad for a fast food meal.


Quickie Personal Flatbread Pizza
1 loaf of flatbread (about 3")
1 ounce mozzarella cheese, shredded
1/2 cup of spinach
3 mushrooms, sliced very thinly
2 teaspoons of Ricotta cheese
  • Cover the flat bread with the mozzarella.
  • Spread the spinach over the cheese.
  • Put the mushrooms over the spinach.
  • Drop the ricotta randomly on the top.
  • Mix it all together.
  • Bake in a 350Āŗ oven for 5 minutes (or until the cheese is melted).


Vegetarian.
