Cheery cherry toasts

OK. It's hot.
I'm not getting into any kind of debate about Climate Change. I'm just looking at a weather map and I see red everywhere in North America. (Those of you in Europe aren't looking so bad and the southern hemisphere is in winter so I wasn't including y'all.)
Anyhow...as those who know me know, I am not a fan of conditioned air, so cooking is sometimes too much.
Today, I decided on a cooler meal for my lunch.
Cherries are fairly inexpensive now so I had a few on hand. I was just going to have those for a meal. But then, I decided to make an open face sandwich...and here it is.
Cool, not too bad in calories (about 170 in all for each serving) and full of plenty of good-for-you antioxidants. 

Cherry Cheese Sandwiches
2 cups of cherries, pitted and halved
1/4 cup of mint leaves, chopped
2 tablespoons of orange juice
4 slices of whole wheat bread, toasted
4 ounces of goat cheese (or some other creamy cheese that you like)
  • Toss the cherries, the mint and the orange juice together in a bowl.
  • Spread the toast with the goat cheese.
  • Spoon the cherry mixture over the top of the cheese.
Vegetarian.
