Simple as 1-2-3 Peanut Butter cookies

While I have to eat things like spaghetti squash with honey when I want a sweet treat while I am trying to jump start my metabolism and drop some pounds...it's working and I'm heading the right direction again with my weight...my 20-something friends stay slim with a good diet and exercise so they can afford some tastier treats from time to time.
Monica, who I've known since she was a middle schooler with my oldest daughter, has always been slender, but she has, over the years become a vegetarian and exercises regularly, so she's looking good.
Still, she can afford sweet snacks. Yesterday, she sent me a super simple recipe for peanut butter cookies that are gluten-free.
Simple as 1-2-3 and totally de-lish!
I'll give you the recipe exactly as Monica gave it to me. You can make obvious substitutions if you don't have exactly what she had.

Monica's Three Ingredient Peanut Butter Cookies
1 cup of this natural peanut butter that's been sitting in my fridge
2/3 cup raw sugar
egg white substitute (equivalent to one egg)
(Add a dash of salt to taste)
Mix together. Bake for 8 minutes.
