This treat takes the cake


We have a friend coming over for brunch tomorrow. I've hosted people for breakfast, for lunch and for dinner - even once for a midnight meal, but I've never hosted brunch.

So I once I invited our friend and she accepted, I had to do some research about what to serve.

The most popular brunch menu item I came across was Scones.  Oh-oh...scomes are really hard to make.
I was feeling adventurous, so I figured I'd try a little sconing.

And, once I was done - believe it or not - they were so easy to make that I have no idea why I haven't been making them before.
Give these a try...and don't wait for a brunch to do it.

Cranberry Scones

2 cups of flour
4 teaspoons of baking powder
3/4 teaspoon of salt
3/4 cup of sugar
4 tablespoons of unsalted butter
2 tablespoons of vegetable shortening
3/4 cup of whipping cream
1 egg
1/2 cup of dried cranberries



Heat oven to 375 degrees.
In a large mixing bowl, combine the flour, the baking powder, the salt and the sugar. Mix well.

Cut in the butter and the shortening.
In a separate bowl, combine the cream with the beaten egg then add to the dry ingredients.
Stir in cranberries.
Turn the dough out onto a floured surface.
Roll the dough out and cut it into biscuit size rounds. Brush the tops with a little bit of cream.
Bake the scones for 15 minutes or until they're brown.
