Fight off the Winter Blues with these sunny treats

Sometimes I forget how refreshing lemon and poppy seeds are. It's like a taste of spring.
While we in Florida are budled up for the nearly-Artic blasts that have pushed the temperatures below 70 for nearly two weeks, we are already counting the days until Spring. Like everyone else in the Northern Hemisphere, we'll have to wait another quarter of the year to get out of our funk...
But, there's a way to feel springy whilst sitting, wrapped in our blankets in front of the fireplace: Lemon-Poppy Seed Scones!
Lemon just brings out those feelings of warmth and comfort. Though lemon "season" in warmer climes, at least, comes after the first freeze - probably mid to late December - people think of lemons as summer fare...think, lemonade. Think of this recipe as edible lemonade.

Some people shy away from poppy seeds because they fear consuming them will cause them to fail a random drug test at work. First of all, the amount of opiates is so small that, unless you eat a dozen of these scones in the waiting room of the testing place, you will not have enough in your system to skew the test. While there is not enough opiate for you to enjoy even the slightest buzz, you will feel a warm feeling of sweetness from this recipe that will boost your mood.
This is such an easy recipe too. In under an hour, your winter blues will be gone and you'll be better prepared to face winter.
Lemon-Poppy Seed Scones
2 cups of flour
3/4 cup of sugar
4 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of unsalted butter
1 lemon, zested and juiced
2 tablespoons of poppy seeds
1/2 cup of coconut milk
1/2 cup of water

  • Preheat the oven to 400Āŗ. Grease a baking sheet.
  • Sift the flour, the sugar, the baking powder and the salt into a large bowl. Cut in the butter until the mixture is the consistency of large grains of sand.
  • Stir in the poppy seeds, the lemon zest and the lemon juice.
  • Combine the coconut milk and the water, and gradually stir the whole lot of it into the dry ingredients.
  • Mix until the batter is moistened, but still thick like biscuit dough. You may not need all of the liquid.
  • Spoon 1/4 cup sized plops of batter onto the greased baking sheet so they are about 3 inches apart.
  • Bake for 10 to 15 minutes, until they are golden on top.
Vegan.
