Are you ready to help build a vegetarian community and celebrate with some sliders?

There have been so many requests lately to restart this blog, that I just can't avoid doing it. I had been doing it mostly for my friends, but I have found that the reach went beyond my little circle and that I am always ready to find fun ways for people to eat better...
It makes me happy to know that so many people are choosing a healthier lifestyle. They say that abs are made in the kitchen. If that's the case, let's get cooking... (If you want more than just good food to get into shape, you're going to have to talk to my daughter the personal trainer.)
Even those who choose to be flex-itarians or to do Meatless Mondays are making a step toward healthier eating. That can't be a bad thing.
Not everyone I heard from is a vegetarian. Some people just want a vegetarian dish for a special occasion. Or they want to start introducing more vegetables into their diet. Or they are just not sure what vegetarian food is.
"I notice you have more stuff besides tofu and steamed veggies on here," one person wrote to me. "I think I could eat some of this stuff. Will you put up more recipes, please?"
So here I am. My plate is a little full. (I also do painting - check out my online gallery and facebook page, and book illustrations, and some traveling about...)
But I am doing the cooking for myself...why not share it?
I am going to start of slowly - a couple of times a week...and build up more over time.
Also, I'd like to make this more of an interactive site. Send me recipes and photos and we can put those up to fill in the days where I am not able to cook a dish and share it.
I want to hear from y'all once we get this thing in gear. Send in recipes. Share the blog and the Facebook page. Make suggestions. Make requests.

My friend Lori will hate this recipe - she wants to eat healthier, but she detests kale. But several others have asked about some way to serve kale besides boring old kale chips or a pile of boiled kale on their plate so I'm going to start with this and do a healthier take on a dessert for her later.


Kale and Quinoa Sliders

2 ½ cups of cooked quinoa, cooled
4 cups of kale, chopped small 
3 large eggs, beaten
1 teaspoon of sea salt
½ of an onion, diced small
½ cup of chives, chopped
½ cup of Parmesan cheese, grated
2 cloves of garlic, minced
¾ cup of bread crumbs 
2 tablespoons of oil plus more for frying
  • Combine the quinoa, eggs, Parmesan, chives and salt in medium mixing bowl.
  • Heat the two tablespoons of olive oil in a skillet on medium heat then sweat onions and garlic for about 3 minutes. Add kale to skillet and cook until kale is bright green and soft.
  • Add the kale mixture to quinoa mixture.
  • Add the breadcrumbs and stir the whole lot up until it's thoroughly combined.
  • Put another skillet on medium heat and add enough oil to coat bottom of it.
  • Make small patties using a quarter cup of quinoa mixture and put these sliders in the skillet being careful not to splash hot oil or overcrowd the pan.
  • Fry them until they are a golden brown on each side - about 5 minutes per side.
  • Serve burger style on mini buns or by themselves with a crispy salad.
