I have several friends with diabetes who would love nothing better than to feast on sweets all day long. That would be a bad choice.
I like it better when my friends make good choices when it comes to food. What better way to make a healthy choice than to make something that is both good and good for you. I have been working on making some recipes that are diabetic friendly for those friends...and, yes, I am reworking some others for those on gluten free diets as well.
These muffins taste like a delicious carrot cake - minus the super sweet cream cheese frosting. Frankly, whether you worry about your blood sugar or not, these muffins are so good because they are not sickeningly sugary. I'd eat one for a treat...no question. The natural sweetness from the pineapple, the stevia and, yes, even the carrots, makes these just the right amount of yummy.

If you are diabetic, these muffins are a safe treat. If you're not, these are so delicious, you'd never guess they were good for you.

Diabetic-safe Carrot Cake
2 cups of flour
3 teaspoons of baking powder
1/2 teaspoon of salt
1 egg
1 teaspoon of cinnamon
3 teaspoons of stevia
1/2 cup of butter, melted
3/4 cup of carrots, shredded or pureed
1/3 cup of pineapple, pureed
1/2 cup of chopped walnuts

  • Preheat the oven to 400Āŗ.
  • Prepare muffin cups. Either line with paper or use oil and flour.
  • Beat the egg and the stevia together.
  • Stir in butter, carrots, pineapple, sour cream and vanilla.
  • Fold in the nuts.
  • Bake for 20 minutes or until a tester comes out clean.
  • Cool in the pan for 15 minutes and transfer to a wire wrack.
Vegetarian.
