Five Spice Powder

A recent trip to the grocery revealed that all manner of random things have not been given priority in this time of COVID-19. Understandably, stores are more interested in keeping eggs in stock than paper clips. Toilet paper is more likely to be restocked than Five Spice Powder.
But I needed Five Spice Powder.
Need is a strong word, but I wasn't going to let the store's lack of understanding of my desire to properly season my food to keep me from doing so. So, in case you also have a need for Five Spice Powder, here's how to make it:
Five Spice Powder
- 2 teaspoons of peppercorns
- 6 star anise
- 1 teaspoon of cloves
- 1 tablespoon of ground cinnamon
- 1 tablespoon of fennel seeds
- In a dry skillet, toast the peppercorns by shaking the pan over low heat until the aroma of the peppercorns is released, about three minutes.
- Grind the toasted peppercorns and the star anise. You can use a mortar and pestle (my preferred method), the back of a spoon, a blender, a pepper mill, or a spice grinder.
- Shake the ground spices through a fine mesh strainer.
- Grind once more.
- Store in an airtight container.
