Whip it good: Dalgona

Dalgona or whipped coffee is one of the trendiest drinks these days. Not only did I see it in the New York Times, people are making it on TikTok and Instagram.

It is spreading through the trendy food world to things like popsicles. lattes and even martinis. If you can put whipped coffee into something, you'll find it there.

And with the world in quarantine, a special treat that's easy to make, that looks impressive and  that can be made with things you already have in your pantry is bound to catch on.

Before it was a fad, people in Greece  and Pakistan and India were drinking versions of sweet, frothy coffee (frappe and phenti hui)

It's a super sweet coffee that is the color and resembling the spongy texture of a Korean sweet of the same name (that actually contains no coffee -- only sugar, baking soda and oil.)

I tried this recipe a few ways but found that the original works the best for whipping up tall and staying whipped for longer. Use sugar. Stevia will work, but it's not as good of a whip. Maple syrup lends a great taste and works surprisingly well, but doesn't have as much staying power. Honey didn't work for me.

And this is a strong coffee drink. If you like a weaker cup (I grew up drinking Cuban coffee from the age of 3 so don't give me watery joe), use a weaker blend and a little less of the granules.

Whipped Coffee (Dalgona)
1 serving
2 tablespoon of instant espresso  (my favorite is Bustelo)
2 tablespoons of granulated sugar
2 tablespoons of hot water
1/2 cup of your favorite nut milk (cow or goat milk work as well, if you drink those)


  1. In a large mixing bowl, add the coffee, the sugar and the water.
  2. You can whisk it by hand or by using a hand mixer or stand mixer.  Mixing by hand, I discovered, will take about 500 strokes with your whisk. If you're up for that, go for it...it's a great workout.
  3. Using an electric mixer is far easier...Startt at the slowest speed until all the coffee and sugar are dissolved. Switch the speed to highest setting and mix for a couple of minutes (until hard peaks form). 
  4. Put milk into a cup and add some ice.
  5. Spoon in the whipped coffee and enjoy.
