Like a pecan pie to go






 People sometimes think of vegetarians as rail thin. So when they saw me...and let's just say I'm not a frail woman,,,they were surprised. 

Hey, I would tell them, "Bread is vegetarian...DESSERT is vegetarian!" Of course that caught up with me and I have been told to drop some weight. Gone are the cheesecakes. Oreos (vegan, by the way) are relegated to the hubby's side of the pantry. Chocolate peanut butter cookies (have I shared that recipe with you yet? Remind me to do that.) are relegated to the sidelines for a while. Pecan pie? You can forget about that one for now.

Now, I love fruit, but that is not my idea of a dessert every time...my mother never had anything else for dessert, but I like a bit more variety.

So, I've been searching for plant-based desserts that are delicious, nutritious and not just a bowl of fruit. There are more than you would think. So, here, is one of my favorite of the few I have tried so far. And, don't worry, not all that I share will be diet friendly. Not everyone is calorie conscious, I understand.

So, here's the first: a gluten-free, dairy-free, vegan treat that is 110 calories per 30 gram serving. It has 21 grams of carbs so it's not diabetic friendly. Before I shared it with others, I did take a bite and they taste like little bits of Southern Pecan Pie.


Southern Pecan Date Rolls
Makes 12-15 30g servings

1 cup of pitted dates, packed
1 cup of pecans
1/2 teaspoon of sea salt
1/2 teaspoon of real maple syrup
  1. Put all the ingredients in a food processor and pulse until it forms a sticky dough.
  2. Plop the dough out and roll into 12 to 15 1-inch balls, which weigh approximately 30 grams.
  3. (I did not, but you might want to roll the balls in shredded coconut or push a pecan half into each ball.)
  4. If you do not consume these right away, store them in the refrigerator.
