Pea Hummus for the new healthier happy hour

It's hard to think about parties these days.  We've been social distancing for what seems like months. Do you even remember when we used to get together with food and drink?

All is not lost. We can all still have a great time together and eat well.

Lately, I know some who have been have transitioned their Zoom meeting spaces into virtual happy hours with fun results.  Having a few drinks and some appetizers with our friends from the comfort of our own dining room table or the living room is the new normal.

With Spring in the air, I was craving a lighter appetizer for my own little happy hour while chatting on the computer with some friends from high school. We're scattered across the country anyhow so our happy hours are pretty much always virtual.

Happy hour is healthier these days. I'm working on eating healthier...even at snack time. So, I was looking for something a little healthier than the fried stuff that makes up a lot of bar food. Just becauuse something is healthy doesn't mean it doesn't taste good...I've had to reintroduce myself to that concept.

I stumbled across a recipe for Pea Hummus while looking for something else entirely on the BBC Food website.
Pea plants -- no peas yet

My first thought was actually "Yuck", but then the more adventurous part of me said, "Why not try it?"  Chickpea hummus is delicious...why not green peas?

So, a few days later, I started playing around with recipes and came up with a combination that tastes delicious. The pea plants in our garden haven't produced anything yet and there haven't been any fresh peas in the market yet so I pulled a bag of peas out of the freezer.

You can whip this up in a couple of minutes, cut up some veggies or grab some pita chips and pour yourself a glass of wine or a sparkling water and -- Voila! -- it's happy hour.

Green Pea Hummus
Serves 6
  • 1 1/3 cups of frozen peas, thawed
  • 1/2 cup of chopped parsley
  • 1/4 cup of warm water
  • 1/2 cup of tahini
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • salt to taste
  • 2 garlic cloves, chopped
  1. Put all the items in a blender or small food processor and whip it up. That's it.
  2. Serve with chopped vegetables or pita chips.
