Caramelized Onion, Goat Cheese and Sweet Pepper Flatbread





Our friend Kayla jumps out of perfectly good airplanes just for funsies.

Despite that, she's a smart, creative young woman. Like most young people these days, she is working from home...long hours and little desire to rush out to the grocery store at the end of the day.

When the fridge supplies start to dwindle, there are two choices. a) go to the grocery or b) make what you can out of what you have. My favorite is the latter.

So when I saw a post on her Instagram the other day that had a fridge cleaning recipe, I asked for permission to share it. She gave the go-ahead and confirmed that it was simple and tasty.

I made the basic recipe with what was in my fridge and you can do it with what's in yours. Gather up a bread, a spreadable white cheese, onion, sweet pepper and get ready to whip up a meal that is so much better than those basic ingredients.

And, get to the grocery after you eat...you're probably out of food now.

Kayla's What's-In-The-Fridge Flatbread Dinner
Makes one flatbread meal (or two side dish servings)

  • 1 4x8" piece of flatbread
  • 2 tablespoons of goat cheese (plain or honey)
  • 1/4 cup of caramelized onions*
  • 1/2 a red bell pepper, diced
  • Rosemary, a few sprigs, for serving

  1. Spread the cheese on the flat bread.
  2. Top with goat cheese, onions and peppers
  3. Put under the broiler for 5 minutes to incorporate the flavors and heat it through.
  4. Sprinkle with rosemary and serve.
*If there are not caramelized onions already in your fridge, you can make them easily. Heat, over medium low heat, a tablespoon of oil and mix in an onion that has been slice into thin strips. Stir occasionally for about 10 minutes. If they look like they're drying out, add a bit of water to the pan. After 10 minutes, sprinkle with a half teaspoon of salt. Keep stirring occasional for the next 30 minutes or until the onions start sticking to the pan and are golden brown. You can use them at this point or, for a few more minutes, keep stirring and scraping up the brown bits, adding a little oil if they get too sticky.
