Make your dessert healthy-ish: Low carb Peanut Butter Cookies
- I know there are a lot of y'all out there who have dietary restrictions that mean you have to push desserts away. It might be as part of a weight loss plan. It might be that you've gotten a diagnosis of pre-diabetes or diabetes.
Maybe you just want to eat healthier, but your sweet tooth is giving you real troubles.
Peanut butter is a good way to feed that desire to have a sweet treat. Sometimes you might want that satisfying bite into a cookie. These cookies give you that, while being low carb (4g per cookie) and gluten free,

- Healthiest Peanut Butter Cookies
- Makes 12-15 cookies
- 1 cup of natural smooth peanut butter
- 1 large egg
- 2/3 cup of maple sugar (or other granular sweetener)
- 1/2 teaspoon of. baking soda
- 1/2 teaspoon of vanilla extract
- Preheat the oven to 350°F and line a cookie sheet with parchment paper and set aside.
- Put the maple sugar in a spice grinder and blend until it's powdered. Set aside.
- Put all of the ingredients into a bowl and mix until you get a smooth dough.
- Roll about 2 tablespoons of dough into a largeish ball and put it on the cookie sheet. Repeat with the rest of the dough. You'll have a dozen or so cookies.
- Flatten the balls with a glass and use a fork to make a criss-cross pattern on the top of each cookie.
- Bake for 12 to 15 minutes.
- When the cookies are done, let them cool on the cookie sheet for about 10 minutes and then transfer them to a cooling rack for another 15 minutes before serving.
