Make your dessert healthy-ish: Low carb Peanut Butter Cookies

  • I know there are a lot of y'all out there who have dietary restrictions that mean you have to push desserts away. It might be as part of a weight loss plan. It might be that you've gotten a diagnosis of pre-diabetes or diabetes. 

Maybe you just want to eat healthier, but your sweet tooth is giving you real troubles.

Peanut butter is a good way to feed that desire to have a sweet treat. Sometimes you might want that satisfying bite into a cookie. These cookies give you that, while being low carb (4g per cookie) and gluten free,

  • Healthiest Peanut Butter Cookies
  • Makes 12-15 cookies
  • 1 cup of natural smooth peanut butter
  • 1 large egg
  • 2/3 cup of maple sugar (or other granular sweetener)
  • 1/2 teaspoon of. baking soda
  • 1/2 teaspoon of vanilla extract
  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper and set aside. 
  2. Put the maple sugar in a spice grinder and blend until it's powdered. Set aside. 
  3. Put all of the ingredients into a bowl and mix until you get a smooth dough.
  4. Roll about 2 tablespoons of dough into a largeish ball and put it on the cookie sheet. Repeat with the rest of the dough. You'll have a dozen or so cookies.
  5. Flatten the balls with a glass and use a fork to make a criss-cross pattern on the top of each cookie.
  6. Bake for 12 to 15 minutes.
  7. When the cookies are done, let them cool on the cookie sheet for about 10 minutes and then transfer them to a cooling rack for another 15 minutes before serving.
