More than a tomato salad

I love tomatoes. I can slice up a tomato and some cheese and that's a perfectly good meal as far as I'm concerned. 

They are fresh and sweet and they are great for your health. As a matter of fact, they are considered a superfood, with nutrients that support healthy skin and heart health. Some studies show that tomatoes can lower blood pressure and possibly even lower glucose levels.

In addition, cherry tomatoes contain more beta carotene than full size tomatoes.

Pick whatever tomatoes you like. The more kinds of tomatoes you have in this salad, the better it will taste.

Tomatoes with sumac, shallots, feta and pine nuts
Makes 4 serves
  • 1 large shallot, sliced paper thin
  • 1 1/2 tablespoons of sumac
  • 2 tablespoons of white wine vinegar
  • Salt
  • 1 1/2 of tomatoes (get a good variety of sizes and colors)
  • 2 tablespoons of olive oil
  • 3/4 cup of basil leaves
  • Black pepper
  • 1/4 cup of pine nuts
  1. Put the shallots, the sumac, the vinegar and a pinch of salt. Mix with your fingers so that the sumac gets pushed into the shallots.
  2. Set it aside  for 30 minutes.
  3. Slice the tomatoes into half inch wedges.
  4. Add the olive oil and the basil leaves, a sprinkle of salt and some pepper.
  5. Put the tomatoes in a big bowl. Spread the shallots over the tomatoes. Sprinkle the feta and pine nuts over and mix it all together.
