To prepare the zucchini noodles (zoodles), start by slicing off the ends of the zucchini. Using a spiralizer make the 'noodles' by twisting the entire zucchini through the device. Cut the zoodles into managable foot-long pieces. Set aside.
Make the pesto (see link above).
Heat a frying pan over medium heat and add the oil.
- Add the tomatoes, the garlic, the thyme, the salt, and the pepper. Let everything cook together for about three minutes, stirring occasionally.
Add the zoodles and the pesto to the frying pan and mix gently for about a minute (until they're heated through). Serve hot or let them cool down.
