Zip up your zoodles with pesto and tomatoes

I

  • 4 medium zucchini
  • 1 tablespoon olive oil
  • 2 cups of cherry tomatoes, cut in half
  • 1/4 cup pesto (see recipe here)
  • To prepare the zucchini noodles (zoodles), start by slicing off the ends of the zucchini. Using a spiralizer make the 'noodles' by twisting the entire zucchini through the device. Cut the zoodles into managable foot-long pieces. Set aside.
  • Make the pesto (see link above).
  • Heat a frying pan over medium heat and add the oil.
  • Add the tomatoes, the garlic, the thyme, the salt, and the pepper. Let everything cook together for about three minutes, stirring occasionally.
  • Add the zoodles and the pesto to the frying pan and mix gently for about a minute (until they're heated through). Serve hot or let them cool down.
