Creamy and fruity: Chia pudding

I like to have fruit with a creamy something,,,yoghurt, ricotta cheese, brie for breakfast or afternoon snack.

A few years ago, I discovered chia pudding. Yes, as in ch-ch-ch-chia pets. The seeds that sprout into funny green hair or fur also get thick and creamy when soaked in milk or something like kefir.

Alone, it's a pretty bland pudding, but if you mix it with some maple syrup, it's pretty tasty. But, you still want to mix it with some fruit to help with the textural aspect. 

But everything together is delicious. This is a great breakfast or a healthy dessert option. It's sweet and creamy and fruity.

Fruity Chia Pudding
Serves 1
  • 1/4 cup of chia seeds
  • 1/4 teaspoon of vanilla
  • 1 tablespoon of maple syrup
  • 1 cup of nut milk (coconut, almond...your preference)
  • 1 peach
  • 1/4 cup of blueberries
  1. Whisk together the milk, the vanilla and the maple syrup.
  2. Pour this mixture over the chia seeds.
  3. Stir the whole thing until all the chia seeds are incorporated.
  4. Let the mixture sit in the refrigerator for at least one hour or overnight.
  5. When you're ready to have your pudding, cut the peach up into bite size pieces, mix it into the pudding.
  6. Put the blueberries on top and serve.
